Make this. Eat this. It's delicious.

Oatmeal Spice Cake

Cake:
1 C. Oats
3/4 C. water
3/4 C. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. cinnamon
4 T. butter
1/2 C. sugar
1/2 C. brown sugar
1 egg
1/2 tsp. vanilla

In one bowl soak oats in water for about five minutes. Make sure the water is at room temperature. In a separate bowl mix together flour, baking soda, baking powder, salt, and cinnamon. In a third bowl mix together melted butter, sugar, brown sugar, egg, and vanilla. After the oats have soaked up all the water mix all three bowls together. Pour batter into an eight inch to nine inch pan. (easy clean up hint: line pan with foil) DON'T FORGET TO SPRAY PAN!! Bake at 350 for 25-30 minutes. Or until toothpick comes out clean.
Let cool for about ten minutes. Turn oven to broil.

Frosting:
1/2 C. brown sugar
3T. butter (softened)
3T. milk
3/4 C. coconut
1/2 C. pecans (opt.)

While cake is cooling mix ingredients together. After ten minutes spread frosting on cake. Broil cake for about 5-10 minutes. Or until the frosting is bubbling.

I made this last night and Michael ate 1/4 of it by the time I got home this morning. I know the oatmeal seems gross but you don't even know it's there...it just tastes like a spice cake. Let me know how you like it.

wow! that looks like a great recipe and even though I don't get off on spice cakes, I know a person in my house who does! I will have to make this for him for Father's day.
